Green haute cuisine by the Madrid chef, Rodrigo de la Calle, has seen its Michelin star has been confirmed in the 2020 edition at its establishment in the traditional district of Chamberí, where it moved from the Madrid sierra in May 2018. Its gastronomic proposal is based on the value of the vegetable world in cuisine. The establishment, structured like a greenhouse, is a small place in which the main room has five tables, each seating four diners. Next to the kitchen, there are three tables, with the capacity for one or two people, which is the best option to observe the preparation of the dishes first-hand whilst enjoying the experience. El Invernadero has four menu options:
Vegetalia, which includes the chef’s latest creations.
Green, tasting menu with vegetarian or vegan options.
Red, in which you can savor seasonal vegetable dishes with the option of accompanying them with meat.
Blue, tasting menu of seasonal vegetable dishes accompanied by fish.
